Super Stuffed Kimchi Dumplings Gluten-Free & Vegan / 글루텐 프리 김치 만두

Ready for some dumplings that are heavily nutritious, gluten-free and vegan?! This recipe has 20 ingredients in the filling alone for great texture and flavor and with homemade gluten-free dumpling wrappers, you get a chewy on the outside, delicious on the inside meal!

Dumpling Filling
2 oz Glass Noodles or Rice Vermicelli
1/4 tsp Salt
1 tbsp Flaxseed Meal (Ground Raw Flaxseed)
2½ tbsp Water
1½ oz Dried Shiitake Mushrooms, rehydrated and finely chopped
½ cup Bamboo Shoots
½ cup Wood Ear Mushroom
1 pk Organic Firm Tofu, squeezed
½ head Napa Cabbage, finely chopped
1½ cups Vegan Kimchi
2 Shallots, finely chopped
⅓ cup Chives, finely chopped
2 Scallions, finely chopped
10 g Garlic
1 tsp Ginger, minced
2 tsp Sesame Oil
¼ tsp White Pepper
½ tsp fine Sea Salt
Sesame Seeds
1½ tsp Potato Starch

Dumpling Wrapper
3¼-inch Cookie Cutter
1 cup Bob’s Red Mill Gluten-Free 1 to 1 Baking Flour
4 tbsp Bob’s Red Mill Gluten-Free 1 to 1 Baking Flour, for dusting
10 tbsp Water, boiled

Dipping Sauce
2 tbsp Gluten-Free Tamari Soy Sauce or Coconut Aminos
1 tsp Ginger, minced
1 Scallion, chopped
1 tsp Toasted Sesame Oil
1 tbsp Rice Vinegar
½ tsp Chili Garlic Sauce
Toasted Sesame Seeds
